Cabbage Casserole

1 small head of cabbage, shredded
1 pound ground beef
1 onion, finely chopped
2 cloves garlic, minced
1 can (14 ounces) diced tomatoes, drained
1 can (10.75 ounces) condensed cream of mushroom soup
1 cup shredded cheddar cheese
Salt and pepper to taste
Olive oil for cooking

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
In a large skillet, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant.
Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain any excess grease.
