1 pound ground beef
1 onion, finely chopped
2 cloves garlic, minced
1 can (14 ounces) diced tomatoes, drained
1 can (10.75 ounces) condensed cream of mushroom soup
1 cup shredded cheddar cheese
Salt and pepper to taste
Olive oil for cooking
Instructions:

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
In a large skillet, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant.
Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain any excess grease.
Stir in the drained diced tomatoes and condensed cream of mushroom soup. Season with salt and pepper to taste.
Add the shredded cabbage to the skillet and stir until well combined with the beef mixture. Cook for a few minutes until the cabbage wilts slightly.
Transfer the cabbage and beef mixture to the prepared baking dish, spreading it out evenly.
Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Remove the foil and continue baking for an additional 10-15 minutes, or until the edges are golden brown and the cabbage is tender.
Once done, remove the casserole from the oven and let it cool slightly before serving.
Serve the Cabbage Casserole warm, and enjoy the comforting flavors!
