Easter Cake Roll

4 large eggs
3/4 cup granulated sugar
1 teaspoon vanilla extract

Once the cake has cooled, carefully unroll it and spread a layer of whipped cream or frosting over the surface.
Gently roll the cake back up without the towel, starting from the same end as before.
Transfer the cake roll to a serving platter and dust the top with powdered sugar.
