This hearty Zuppa Toscana soup is packed with Italian flavors and will warm you up on chilly evenings! Tender potatoes, spicy Italian sausage, and kale come together in a creamy broth that’s simply irresistible.
Ingredients:
1 pound Italian sausage
4 slices bacon, diced
1 onion, diced
3 cloves garlic, minced
4 cups chicken broth
3 cups water
3 medium russet potatoes, peeled and thinly sliced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes
2 cups chopped kale
1 cup heavy cream
Directions:
In a large pot over medium heat, cook the Italian sausage until browned, breaking it into smaller pieces. Remove sausage from pot and set aside.
In the same pot, add diced bacon and cook until crispy. Remove bacon from pot and set aside with the sausage.
Add diced onion to the pot and cook until translucent, about 5 minutes. Add minced garlic and cook for an additional 30 seconds.
Pour chicken broth and water into the pot, then add sliced potatoes, salt, pepper, and red pepper flakes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 10-15 minutes.
Stir in chopped kale and cooked sausage. Simmer for another 5 minutes.
Reduce heat to low and stir in heavy cream. Cook for an additional 5 minutes until heated through.
