Layer upon layer of flavor! This Dutch Oven Tortilla Lasagna is a hearty twist on a classic favorite. It’s packed with savory goodness and perfect for feeding a hungry crowd at your next outdoor gathering.

Ingredients:

2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 green bell pepper, diced
1 pound ground beef
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon chili powder
1 teaspoon cumin
1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) diced tomatoes
1 can (8 ounces) tomato sauce
6 large flour tortillas
2 cups shredded cheese (cheddar, mozzarella, or a blend)
Optional toppings: sour cream, avocado, cilantro
Directions:

Heat olive oil in a Dutch oven over medium heat. Add onion and garlic, cooking until softened.
Add diced bell peppers and cook until they begin to soften.
Add ground beef, breaking it apart with a spoon, and cook until browned.
Stir in salt, black pepper, chili powder, and cumin.
Add black beans, diced tomatoes, and tomato sauce. Stir to combine and simmer for 10 minutes.
Preheat your Dutch oven by placing 12 coals underneath and 16 on top.
Place a layer of tortillas on the bottom of the preheated Dutch oven, tearing them if necessary to fit.
Spoon a layer of the beef mixture over the tortillas, then sprinkle with cheese. Repeat layers, ending with a layer of cheese on top.
Cover the Dutch oven and cook with 8 coals underneath and 18 coals on top for about 20-25 minutes, or until the cheese is melted and bubbly.
Let it rest for a few minutes before serving. Top with optional toppings as desired.
