Sweet Hawaiian Crockpot Chicken


4 boneless, skinless chicken breasts
1 cup pineapple juice
1/2 cup brown sugar
1/3 cup soy sauce
1/4 cup ketchup
2 cloves garlic, minced
1 teaspoon grated ginger
1 tablespoon cornstarch
2 tablespoons water
Pineapple chunks and sliced green onions for garnish

Place chicken breasts in the crockpot.
In a bowl, mix together pineapple juice, brown sugar, soy sauce, ketchup, garlic, and ginger. Pour over chicken.
Cook on low for 4-5 hours or until chicken is cooked through and tender.
In a small bowl, mix cornstarch and water until smooth. Stir into the sauce in the crockpot, and cook on high for an additional 30 minutes or until sauce has thickened.
Serve chicken and sauce over rice, garnished with pineapple chunks and sliced green onions.
