Ingredients:
2 cups diced apples
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
1/2 cup old-fashioned oats
1/4 cup all-purpose flour
1/4 cup packed brown sugar
1/4 cup unsalted butter, melted
1/4 teaspoon salt
Directions:
Preheat your oven to 350°F (175°C). Grease a mini muffin tin with non-stick spray.
In a mixing bowl, combine the diced apples, granulated sugar, and cinnamon. Toss until the apples are evenly coated, then set aside.
In another bowl, mix together the oats, flour, brown sugar, melted butter, and salt until crumbly.
Press about 1 tablespoon of the oat mixture into the bottom of each muffin cup, forming a crust.
Spoon the apple mixture over the crusts, filling each cup to the top.
Sprinkle the remaining oat mixture over the apples, pressing lightly to adhere.
Bake for 18-20 minutes, or until the tops are golden brown and the apples are tender.
Allow the apple crisp bites to cool in the pan for 10 minutes before carefully removing them to a wire rack to cool completely.
