This delightful dish takes all the savory goodness of classic French onion soup and combines it with tender rice for a satisfying meal that’s sure to warm you up on chilly days.
Ingredients:
2 tablespoons butter
2 large onions, thinly sliced
2 cloves garlic, minced
1 cup long-grain white rice
4 cups beef broth
1 teaspoon Worcestershire sauce
Salt and black pepper, to taste
1 cup shredded Gruyere or Swiss cheese
Chopped fresh parsley, for garnish (optional)
Directions:
In a large skillet or Dutch oven, melt the butter over medium heat. Add the thinly sliced onions and cook, stirring occasionally, until deeply caramelized, about 25-30 minutes.
Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.
Add the rice to the skillet with the caramelized onions and garlic. Stir to coat the rice in the butter and onions.
Pour in the beef broth and Worcestershire sauce. Season with salt and black pepper to taste.
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 18-20 minutes, or until the rice is tender and has absorbed the liquid.
Once the rice is cooked, sprinkle the shredded Gruyere or Swiss cheese evenly over the top.
Cover the skillet or Dutch oven again and let the cheese melt for a few minutes.
Remove from heat and let the French Onion Soup Rice sit for a couple of minutes before serving.
Garnish with chopped fresh parsley, if desired, and serve hot.
